Hearty Veggie Soup

This is a very easy and delicious version of everyone's favorite soup! Great for you, tastes fantastic and so simple. Make a bunch and freeze it for a cold day!
I don't like corn or string beans in mine but got crazy and add them!!!

Servings 8-10 Steps 3
Ingredients
48 oz vegetable stock
6 oz can of tomato paste
1 white onion diced
1 russet potato diced
3 carrots peeled and diced
2 zucchini cut into half moons
2 yellow squash cut into half moons
3 stalks of celery diced
1 rutabaga peeled and diced
7 mushrooms quartered
Olive oil
S&P to taste
Directions
1. Sauté the onion in the olive oil for about 3 or 4 min until they are translucent
2. Add the stock, and remaining vegetables (except the mushrooms) , S&P and bring to a boil, cover and simmer over a low flame for about an hour
3. Add in the mushrooms and cook for an additional 20 minutes
