Spicy Thai Salad

I LOVE this dish! I miss Thailand and this brings me right back to Bangkok!!!!
Easy to make, spicy, acidic, flavor packed! You can make it with ground beef, pork, chicken or turkey. If you dont like fish sauce or cant get it, just use a pinch of kosher salt instead!

Steps 6 Servings 4
ingredients
1 lb ground meat (chicken, pork, beef all work)
1 tbl long grain rice
3 tbl fresh lime juice
1-3 Thai chilis (use jalapenos if you can’t find Thai chilis
3 garlic cloves sliced
1-2 tsp fish sauce
1 small shallot sliced
¼ cup basil leaves roughly chopped
¼ cup mint leaves roughly chopped
¼ cup coriander leaves roughly chopped
Red or Green leaf lettuce to serve
directions
1. Brown the meat in about 1 inch of water in the pan. Once browned and crumbly, drain and set to the side
2. In a small pan toast the rice until it turns brown, cool and use a spice mill to grind to a flour
3. Using a mortar and pestle crush the garlic, chilis and shallot to a paste. Add the rice powder HALF the basil, coriander, mint and mix to a paste. Add the fish sauce and lime juice and mix
4. Add the paste to the ground beef and flavor as needed (salt, pepper, more chili!)
5. Add the remainder of the herbs in and mix well.
6. Chill and serve in lettuce cups garnished with chopped mint.
