3 Cheese Pizza

I know i normally do Asian, Middle Eastern or ethnic recipes but yesterday I had the worst cravings for pizza so i maed one! I didn't have the low fat mozzarella cheese so I used string cheese...NOT RECOMMENDED, but it did the trick.

It was so good and only took about 30 min to make. To save some time you can use the frozen cauliflower rice..



3 cheese pizza

2 pies


ingredients


For the crust…

Half of a cauliflower broken into large fleurettes

½ cup graded parmesan or Reggiano cheese

1 beaten egg

1.5 tsp dry Italian herbs (basil, oregano, rosemary, marjoram)


For the sauce…

3 Roma tomatoes (or I bsk of cherry tomatoes)

Handful of fresh basil leaves

½ red bell pepper


For the toppings…

¼ cup crumbled feta cheese

¼ cup low fat mozzarella cheese

2 oz skim milk ricotta cheese

2 greens, 3 condiments, 1 lean protein



directions


For the crust…

1. Grab a food processor and pulse the cauliflower until it is a fine crumble

2. Pour the cauliflower into a clean dishtowel and ring out as much water as possible.

3. Spread the cauliflower on a pile of paper towels, cover with more paper towels and let dry for about 20 min

4. In a large bowl mix the parmesan cheese, cauliflower, herbs, and egg into a dough

5. Put a piece of parchment paper on the counter and using about half the dough create a flat circle about ¼ to 1/3-inch-thick and about 8 - 10 inches in diameter.

6. Carefully place the parchment paper directly on the oven rack of a pre heated (400°) oven and bake for about 20-30 minutes until it is golden brown

7. Remove from the oven and let cool on a cooling rack so it stays crispy


For the Sauce…

1. In a food processor puree the tomatoes, basil and red pepper


The final pizza…

1. Once the crust has cooled top it with a thin layer of the sauce and top with the cheeses. For the ricotta just use a small spoon and distribute it evenly in little clumps

2. Bake it directly on the oven rack in at 400° for about 15 minutes or until the cheese is melted

3. Remove it from the oven, let it cool for a few minutes cut and serve!!!
