Another Dam Pizza!!

We all LOVE pizza and just cuz you are ketofab or L&G doesn't mean you cant feed your cravings...I have tons of them. This is like a FULL meal and it is totally GUILT FREE (too bad the rest of life isn't). If you don't want to make your own crust, no sweat, There are some pretty good frozen cauliflower pizza crusts available in most markets.


This version uses a Mediterranean Kalamata Olive sauce instead of a traditional tomato sauce...its a true designer gourmet pie!

ingredients


For the crust…

Half of a cauliflower broken into large fleurettes

½ cup graded parmesan or Reggiano cheese

1 beaten egg

1.5 tsp dry Italian herbs (basil, oregano, rosemary, marjoram)


For the sauce…

8 oz pitted kalamata olives

3 oz sun dried tomatoes

3 oz red bell pepper

1 oz fresh oregano


For the toppings…

¼ cup crumbled feta cheese

¼ cup low fat mozzarella cheese

3 shiitaki mushroom sliced

4 slices Italian prosciutto (optional)

4 oz cooked & drained spinach



directions


For the crust…

1. Grab a food processor and pulse the cauliflower until it is a fine crumble

2. Pour the cauliflower into a clean dishtowel and ring out as much water as possible.

3. Spread the cauliflower on a pile of paper towels, cover with more paper towels and let dry for about 20 min

4. In a large bowl mix the parmesan cheese, cauliflower, herbs, and egg into a dough

5. Put a piece of parchment paper on the counter and using about half the dough create a flat circle about ¼ to 1/3-inch-thick and about 8 - 10 inches in diameter.

6. Carefully place the parchment paper directly on the oven rack of a pre heated (400°) oven and bake for about 20-30 minutes until it is golden brown

7. Remove from the oven and let cool on a cooling rack so it stays crispy


For the Sauce…

1. In a food processor puree the kalamata olives tomatoes, oregano and red pepper

The final pizza…


1. Once the crust has cooled top it with a thin layer of the sauce and top with the toppings

2. Bake it directly on the oven rack in at 400° for about 15 minutes or until the cheese is melted

3. Remove it from the oven, let it cool for a few minutes cut and serve!!!
