Asian Fettuccini

After a 9 hour drive today I did a so simple tofu fettuccine with shiitake mushrooms, shishito peppers, green peppers and shiso with ponzu! It was SO good and took like 10 minutes!

Asian fettuccini
2 servings Steps 3
ingredients
1 pkg tofu shirataki fettuccine noodles, drained**
6 shishito peppers chopped
1 bell pepper chopped
1 handful of cilantro, chopped
1 pkg Shiso leaves chopped*
8 shiitake mushrooms sliced
1 tbl sesame oil
2 tbl ponzu
*If you can’t find shiso you can use some chopped fresh basil.
** You can find these tofu noodles at most markets near the tofu, in most asian stores and on amazon.com.
directions
1. Grab a large sauté pan and heat the sesame oil.
2. Add the shishitos, bell pepper, shiso and shitake and saute for about 4 min
3. Add the noodles and the ponzu and toss for another few minutes until it is steaming hot
4. Serve and enjoy!
