(BACON) SMOKED SCALLOPS

OMG the flavors, textures and taste is phenomenal! I did this in a smoker, but if you don't have one you can easily still do this. Just google search stovetop smoking. It seems daunting, but is actually really easy...it just takes time.
I ended up making sashimi out of the scallops which was to die for!

ingredients
8 FRESH U-8 scallops (cleaned) . I use sushi grade Nantuckets
6 cups water
1/3 cup kosher salt
¼ cup Stevia
8 slices applewood smoked bacon or turkey bacon or soy bacon
directions
1. In a bowl, mix the water, salt, Stevia and bay leaf until the salt and Stevia dissolves
2. Put the scallops into the mix, chill in the refrigerator for about an hour
3. Place the scallops on a rack and put back into the refrigerator for another hour
4. Wrap the scallops with the bacon of your choice like a “belt” around each scallop and secure with a toothpick
5. Put the wrapped scallops on the upper rack of the smoker with a shallow pan of water underneath the lower rack.
6. Smoke at 200° for about 30-40 min until they are firm and translucent
