FRESH TOMATO SAUCE

Mt go to sauce for everything! Again, easy, fresh, healthy and full of flavor. I use sweet red pepper instead of adding sugar! I always have a batch in the freezer ready to go!!!

2 cups Steps 4
ingredients
3-4lbs Roma tomatoes cut into quarters
2 bunches fresh basil chopped
2 sprigs fresh rosemary (needles only) chopped
1 bunch fresh oregano chopped
2 cloves garlic chopped
1 red pepper, seeded and chopped into 1-inch pieces
1 bay leaf
1 tbl salt
1 tsp fresh ground black pepper
directions
1. Put everything in a stock pot and heat over a medium hot flame for about 4 to 5 min
2. Using a cooking spoon break up the tomatoes, reduce the heat and simmer for 20 to 30 minutes until the tomatoes are soft and broken down
3. Use a stick blender (or transfer to a blender) and puree the sauce until it is smooth. Taste and add salt/pepper to your taste
4. Continue to simmer for another 10 minutes
