Gazpacho!

This is a great and VERY healthy summer go to for me! Its so refreshing, simple to make and it seems everyone loves it! This is vegan, L&G and oh so Ketofabulous!!! Its guilt free deliciousness :)





Servings 4 Steps 5


ingredients

2 lbs over ripe tomatoes quartered

1 green pepper roughly chopped

1 small red onion roughly chopped

1 English cucumber, seeds removed and roughly chopped

½ bunch fresh parsley chopped

2-3 cloves garlic

½ cup good quality olive oil

¼ cup balsamic vinegar

¼ cup apple cider vinegar

1 tsp dried basil

3 – 4 cups tomato juice

directions

1. Using a food processor chop each of the vegetables to a fine chop. Do each veggie individually and set aside

2. In a large bowl combine the chopped tomatoes, pepper, onion, cucumber and parsley

3. Add the olive oil, vinegars and dried basil and mix. Add the tomato juice until you reach the consistency you like (I like mine super thick)

4. Season with S&P to taste, put in a glass or plastic sealed container and refrigerate overnight. Taste again and add more S&P or chili sauce if you like it spicy!

5. I garnish mine with avocado and a bit of Greek yogurt or sour cream
