Grilled Lamb with Mint Pesto

This is a GREAT alternative to basil pesto and it goes FANTASTIC with lamb! This mint pesto is also friends with pork, veggies, pasta and just about everything that you would use basil pesto with,...I LOVE it with tomatoes and mozzarella!


What really makes this is using almonds...make sure you toast them in a pan so they are nice and nutty with tons of aroma. There is NO cheese in this recipe so it is actually (on its own) totally VEGAN!



1/2 cup Steps 3


ingredients

4 cups of FRESH mint

1/3 cup olive oil

1/3 cup blanched almonds

2 garlic cloves

Zest & Juice of 1 small lemon

Hot tap water if needed*


directions

1. Toast the almonds in the oven at 300° for 5-8 minutes

2. Put the basil in a food processor and chop for a few seconds

3. Add the garlic, toasted almonds, olive oil, lemon zest and juice and process scraping the sides as needed (if it is too thick you can add a bit of hot tap water to thin it out)


This pesto will be thicker than normal

The pesto will keep for about a week

Grill or sear your favorite cut of lamb that you have seasoned with salt and pepper
