Halloumi & Bacon Salad

Fres, tasty, vibrant and ketofabulous! Perfect for a lunch or dinner entree. What makes this delicious is the quality and freshness of the ingredients. Servings 4 Steps 3
ingredients
3 cups mixed greens
2 Persian cucumbers cut into salad size cubes
4 tomatoes cut into eighths (I use heirlooms
1 sprig oregano leaves chopped
1 sprig sage leaves chopped
2 sprigs basil chopped
6 oz pan fried Halloumi cheese* cut into ½ inch cubes
4 oz cooked bacon lardons
directions
1. On each plate put down ¼ of the greens, top with the cucumbers, tomatoes and herbs
2. Drizzle the desired amount of dressing over it
3. Top with the halloumi and bacon
*For the Halloumi cheese you can get it in most Middle Eastern/ethnic markets or on line. I like the Halloumi from Greece& Cyprus.
To cook the Halloumi simply pan fry it in a little olive/avocado oil and I like to add 1/2 tsp of lemon juice
