Israeli Cauliflower Rice

This is a NO CARB riff on a rice that an 97 year old woman in Jerusalem taught me; Ms. Shuli from Bagdad! Only a few ingredients but packs a flavor punch. Use frozen riced cauliflower to make it even easier. The Zaatar is the key spice in this and you can get it at most ethnic groceries or on line.




Servings 2 Steps 4 – 7


ingredients

1 whole cauliflower with the stems removed (or 2 cups frozen cauliflower rice)

1 tbl olive oil

½ tsp ground cardamom

½ tsp ground cumin

½ tsp ground coriander

1 tsp ground zaatar

1 tsp good quality salt


directions

1. Break the cauliflower into large fleurettes

2. Wrap the rice in a paper towel to absorb the moisture

3. Using the large grater of a box cheese grater, grate the cauliflower into “rice”

4. Heat the oil over a medium heat and add the spices and cauliflower rice and mix well.

5. Reduce the heat to low and cook for about 10 min (4 min if using the frozen)

6. Remove from the heat and let it rest for 5 minutes covered

7. Remove the cover and serve
