Jan's Parm Creamed Spinach

Not healthy, not low cal, not low carb but OMG!!!! I am bringing a friend the ultimate Steakhouse treat; grilled NY Strip with an Asian Mustard sauce and these Parm Creamed Spinach!! I hope Jan loves it!

Servings 2 Steps 4
ingredients
16 oz fresh spinach
4 tbl unsalted butter (sauce)
3 tbl unsalted butter (spinach)
1 tbl chopped garlic
¼ cup finely chopped white onion
1 tbl flour
1.5 c half & half
1 cup fresh grated parmesan cheese
1 pinch Cayenne Pepper
S&P to taste
directions
1. In a medium sauce pan melt the butter over a medium heat and when melted add the flour and whisk until it forms a paste, add the onions and garlic and continue to whisk for another 3 min
2. Slowly add the half & half whisking the entire time. It will start to form a sauce. If it is still thick, add more half and half until it becomes a thick liquid, add the parmesan and the cayenne and continue to mix. Keep adding half and half only if needed to thin it out a bit. Add salt and pepper to taste
3. In another pot melt the butter and add the spinach handful at a time until the entire batch is cooked way down, is a bit liquid-like and fully cooked
4. Drain the spinach, add the sauce a bit at a time until it is a creamy consistency
5. Put the creamed spinach in a oven save dish, top with more parm and bake for about 5 minutes at 350 until the cheese is melted
