Japanese Tori-Nabe

It is a cold rainy night out so I thought a nice warm hearty and HEALTHY Japanese Chicken Miso Nabe would hit the spot. Nabe is a very popular home dinner, especially in the winter, AKA the hot pot!


I had just about everything I needed at home so I just had to pick up some chicken thighs and mushrooms. This is truly an easy home dinner that is lean, green and keto-fab! Give it a try!!!!







ingredients


1 pound boneless and skinless chicken thighs cut int 2 inch chunks

1 pkg firm tofu cut into 2 inch chunks

1 cup miso paste

6 mushrooms (shiitake or crimini)

1 pkg enoki mushrooms

1/2 head of a Napa cabbage chopped into 2 inch pieces

1/3 of a whole daikon cut into half about 1 inch thick (like half moons)

2 yellow squash cut into 1/2 inch slices

2 zucchinis cut into 1/2 inch slices

2 carrots cut into 1/2 inch slices

3 or 4 green onions cut into 2 inch pieces

3 inches of fresh ginger cut into matchsticks

1/4 cup of mirin or rice wine vinegar

1/4 cup of soy sauce

1 pkg


directions


You can do this on the stove OR if you have a butane cooker it is fun to do it at the table!!


1. In a 8 qt pot, fill it half way with hot water and bring to a boil

2. Add the miso paste, soy sauce and mirin and gently mix using the chopsticks

3. When the miso is dissolved add the chicken

4. Next add the veggies starting with the heartiest ones first

5. Bring it back to a low boil

6. Use your chopsticks or tongs to fill the individual bowls with the meat and veggies and ladle the soup over it
