Japanese Yuzukosho Simmered Tofu with ginger - turmeric cauliflower rice

Japanese Yuzukosho Simmered Tofu
2 servings Steps 4
Ingredients
+1 pgk of medium-firm Tofu
+3 green onions (white part chopped, and green part cut into 1-inch pieces)
+¼ cup ponzu (available a just about all markets in the Asian food aisle)
+¼ cup light soy sauce
+¼ cup mirin (available at most markets in the Asian food aisle or rice wine vinegar will work as well
+½ cup water
+1-2 tsp yuzukoshu (a yuzu-pepper paste) you can get it at most markets in the Asian . food aisle or online Use more or less depending you your spiciness level
+2 cups Ginger-Turmeric Cauliflower rice…see my recipe below
Directions
1. In a small sauce pot combine the ponzu, soy sauce, mirin, and water and whisk in the yuzukosho.
2. Put the whole tofu into the pot and bring to a simmer.
3. Simmer for about 5 minutes and flip the tofu over and simmer the other side for 5 minutes
4. Remove and plate it on top of the ginger-turmeric cauliflower rice and garnish with the green onions
Ginger & Turmeric Cauliflower Rice

Ingredients
+½ Cauliflower head
+2 tbl ginger powder or grated fresh ginger
+2 tbl Turmeric powder
+1tsp Sesame Oil
Directions
1. Using a box greater, grate the cauliflower into “rice” using the large grater holes
2. In a pan, warm the sesame oil, add the cauliflower rice, ginger and turmeric powder and gently sauté for about 4 minutes
