Keto Matzo Balls

Just in time for Passover!!! My matzo balls are famous...really! So this year I tried lots of different variations and this one is pretty good...its not the same as my Grandma Ida's but it is Ketofabulous!!!



Servings 6 balls Steps 4


ingredients

1 cup ground almonds (almond meal)

2 beaten eggs

1 tsp salt

1 tbl olive oil


directions

1. In a bowl add the eggs and oil and mix then add the almonds and salt, mix well and put in the refrigerator for 2 hours

2. Bring about 8 cups of water to a low boil

3. Make small balls from the mix (about 1.5 inch) and drop them in the boiling water, cover and let simmer for about 25 minutes

4. Test one by cutting it in half to make sure it is cooked all the way through
