Lemony Pound Cake

I had a bunch of lemons from my neighbor's yard so here you go! Life gives you lemons os make Lemony Pound Cake!


So tart, so sweet, SO DELICIOUS! Not waistline friendly but WOW its so good! Eat it quick as it will be gone fast.

ingredients

1.5 cups flour

1 tsp baking powder

½ tsp salt

1 cup softened butter

1 cup sugar plus 1/3 cup

4 eggs

2 tsp vanilla

¼ cup lemon juice

1/3 cup lemon juice


directions

1. Preheat the oven to 350F and butter/spray a 9 x 9 or loaf pan

2. Combine and whisk the flour, baking powder and salt in a bowl

3. Use a hand mixer and cream the butter. Mix in 1 cup of sugar, one egg at a time and the vanilla

4. Add half of the flour mix, and mix, add ¼ cup lemon juice and mix and then add the rest of the flour mix and mix well

5. Pour the mix into the pan and bake for 65 to 70 minutes. Turn the cake out onto a plate and let cool for 15 min

6. In a small bowl combine the 1/3 cup lemon juice and 1/3 cup sugar and spoon over the lemon cake until all of the mix is absorbed. Let cool
