MEDITERREAN TURKEY & LAMB STUFFED PEPPER

A bit "old school" but still a favorite! I like to add a bit of lamb to this as it gives it more flavor and keeps it moist and yummy! The filling itself makes a great meal as well....

ingredients


½ pound ground lean lamb

½ pound ground lean turkey

1 cup Eggplant & Pepper Salad (see recipe)

4 tbl per person Cauliflower Shawarma Puree (just puree the Cauliflower Shawarma (see recipe)

Whole Bell Peppers (I used yellow, but it doesn’t matter) cleaned with the top cut off

2 tbl olive oil


directions


1. In a skillet heat the olive oil and sauté the lamb and turkey meat

2. When half way browned add the eggplant and cauliflower salad and mix well while continuing to brown the meat

3. Fill the peppers with the meat mix and bake in a preheated (350) oven for about 15 to 20 min until they are softish

Grab a plate and put the cooked stuffed pepper in the middle and using the cauliflower shawarma paste form quenelles and place on the plate
