Great, packed with Middle Eastern spices, easy and great. Reminds me of my university days in Israel!!!

merugez kabobs

ingredients
+1 lb ground turkey
+1 lb ground lamb
+3 garlic cloves sliced thin
+2 tsp Aleppo pepper*
+1.5 tsp kosher salt
+¼ tsp cardamom
+¼ tsp fennel seed
+¼ tsp ground cumin
+¼ tsp ground coriander
+¼ tsp ground caraway
+½ cup chopped FRESH parsley
directions
1. Combine all of the spices with the meat in a bowl and mix with your hands…don’t over mix!
2. Form 8oz “kababs” (like a football). They will shrink to about 6 oz.
3. Refrigerate them for about 30 min
4. Grill them on a med high BBQ (or grill pan) about 4 min on each side. (160F)
I love this served with Zucchini & Mint Salad

zucchini & mint

ingredients
+4 medium zucchinis (top and bottom trimmed)
+½ tsp ground sumac
+1 cup halved cherry (heirloom) tomatoes
+1 cup torn mint leaves
+1 tsp olive oil
+2 pinches of kosher salt
+Fresh lemon juice
directions
1. Slice the zucchini lengthwise
2. In a bowl combine the olive oil, kosher salt and sumac, add the zucchini and toss with your hand
3. Broil the zucchini until cooked but still firm. About 10 min +/-
4. Let them cool and cut into 2” chunks.
5. Grab a bowl and gently mix by hand the zucchini, mint and cherry tomatoes
6. Add the lemon juice to taste
7. Sprinkle a pinch of sumac over the top and serve!
