Mexican-Asian Stuffed Peppers

A great blend of two great cuisines. This uses a totally Asian based veggie stuffing with a very traditional Mexican chili. Mix it up by adding ground meat, cheese or cover them with Relleno sauce!!! Go wild with this. It takes all of 20 min to make these.

ingredients

4 large Anaheim or Poblano Chilis

1-2 Thai Chilis (optional)

3 whole green onions chopped into 2-inch pieces

¼ red bell pepper chopped into chunks

1/3 cup sliced mushrooms

2 inches of fresh ginger chopped

2 garlic cloves

1 tbl soy sauce

1 tbl Tamari sauce (or just use soy)

½ tsp fish sauce

1 tbl sesame oil


directions

1. Blend all of the ingredients EXCEPT the Anaheim Chilis and Sesame Oil in a processor into a paste

2. Cut the tops of the Anaheim Chilis off, carefully remove the seeds and pipe the paste into the chili until they are totally filled

3. Using a grill pan and sesame oil, grill the stuffed peppers until they are blistered and then put them into a 350 preheated oven to finish cooking for about 10 min or until they are soft
