Mexican Lasagna

A classic layered casserole done in a Mexican style. This is great for parties, pot luck or a weeknight dinner. It is SO quick to make and a crowd fav! What makes this truly great is the homemade refried beans and tomato sauce!

ingredients
For the turkey (or beef)
1 lb ground turkey (or beef)
2 tbl vegetable oil
½ onion chopped
½ tsp cumin
½ tsp ground coriander
½ tsp ground California chili
For the Lasagna
4 flour tortillas
16 ounces refried beans
2 cups simple tomato sauce
12 oz queso fresco or ranchero (crumbled)
directions
1. In a large pan add the oil, sauté the onions, add the spices and add the meat and brown
2. In a glass baking dish (I use a 9 x 9 square) coat the bottom with some of the sauce.
3. Place 2 tortillas overlapping on the bottom, spread a layer of the beans, browned meat, tomato sauce and cheese. Repeat this layering once more.
4. Cover with foil and bake at 350F for 15 minutes, let cool for 5 min and serve!
