Mushroom Triad

Using my favorite Japanese Mushrooms, super fresh herbs, this is a wonderful and simple dish. I used Miatake, Shiitake and Enoki BUT youse your favorites...this works well with just about anything!!!





Servings 2-4 Steps 3


ingredients

10 oz shiitake mushrooms (quartered)

5 oz miatake mushrooms (broken apart)

5 oz enoki mushrooms (stems cut off)

2/3 cup chopped cilantro

¼ cup chopped mint

¼ cup chopped shiso (omit if you can’t find it)

1/4 cup chopped tarragon

¼ cup olive oil


directions

1. Preheat the oven to 350 and line a baking pan with parchment paper

2. Place the mushrooms on the parchment paper and drizzle the olive oil over them and sprinkle the herbs on top making sure to evenly coat them

3. Bake for about 15 to 20 min until the mushrooms are slightly browned and roasted. Season with salt or a squeeze of lemon juice if you wish
