No Butter Spiced Chocolate Cookies

Vegan and FABULOUS. A kick of Middle Eastern and Asian spices make these cookies fun. Try them with some espresso, Turkish coffee or mint tea!

ingredients

2 ½ cups all-purpose flour

1 tsp baking soda

½ tsp salt

2 tsp cacao

1 tsp ground cinnamon

½ tsp ground 5-Spice

½ tsp ground cardamom

1 cup vegetable oil

1 cup packed brown sugar

½ cup white sugar

2 eggs

2 teaspoon vanilla extract


directions

1 Preheat oven to 350 degrees F (175 degrees C). Stir together the flour, baking soda and salt; set aside.

2 In a large bowl, cream together the vegetable oil, brown sugar, white sugar and cacao until smooth. Add in the spices and beat in the eggs one at a time, then stir in the vanilla and almond extracts. Blend in the dry ingredients. Drop by rounded spoonful onto ungreased cookie sheets.

Bake for 8 to 10 minutes in the preheated oven. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
