SAAG CHICKEN

This is a wonderful, healthy and easy Indian recipe that I love to make. It is full of flavors, vitamins and absolutely delicious.

Servings 4 Steps 6
ingredients
2 lbs boneless skinless chicken thighs
1 lb spinach cleaned and stemmed
1 tbl garlic paste (see my recipe)
1 tbl ginger paste (see my recipe)
2 tbl plain Greek yogurt
1 tsp ground coriander
1 tsp ground (or leaf) fengugreek*
1 tsp chili powder
½ cup water
salt to taste

directions
1. Grab a heavy pan and over a medium high heat add the garlic paste, ginger paste, yogurt. Coriander, fengugreek, chili powder and water
2. Mix and add the chicken
3. Reduce the heat to a simmer, cover the pan and cook for about 30 min
4. When the chicken is ¾ cooked add the spinach by the handful letting it cook down a bit so there is room to add more. When all of the spinach is in let it cook for 5 min
5. Using tongs remove the spinach and blend it well in a food processor with a few tablespoons of the pan juice
6. Add the spinach puree back to the chicken, cook another 3 minutes and serve
I like to serve this with a simple cauliflower rice!
