Spinach Crust Pizza...DELICIOUS

I tried this for the first time tonight and it wont be the last!!! OMG was it awesome...and so so so easy to make! Go crazy with the toppings and this is packed with tons of veggies.

This honestly is one of the BEST pizzas I have ever made!!!



1 large pie


ingredients


For the crust…

1 lb frozen spinach defrosted and well drained

½ cup graded parmesan or Reggiano cheese

2 beaten eggs

½ cup almond flour

1.5 tsp dry Italian herbs (basil, oregano, rosemary, marjoram)


For the sauce…

3 chopped Roma tomatoes (or I bsk of cherry tomatoes)

Handful of fresh basil leaves


For the toppings…

¼ cup low fat mozzarella cheese

2 slices of provolone cheese

Or whatever YOU like on yours!

For the crust

1. Combine all of the ingredients in a bowl, mix well and knead until it becomes a dough.

2. Flatten it out as flat as you can get it with your hands on a baking sheet lines with parchment paper

3. Bake at 370 for 25 minutes or until the edges begin to brown


For the Sauce…

1. Put the tomatoes and basil in a small sauce pan and cook over a medium heat until they begin to fall apart

2.

In a food processor or using an immersion blender puree the tomatoes


The final pizza…

1. Once the crust has cooled top it with a thin layer of the sauce and top with the cheeses or other toppings

2. BROIL it directly on the oven rack for about 3-5 minutes or until the cheese is melted
