Strawberry Chef Salad

Spring is here and this is an AWESOME lunch or dinner entree salad. Ketofab and L&G and PACKED with flavor. So healthy, clean and will fill you up without feeling yuk!
I like using Cojeta cheese as it has a really creamy and light flavor but feel free to use feta or parmesan. Omit the cheese and the pork and it becomes a true Vegan delight!!

Servings 2 Steps 2
ingredients
4 oz fresh spinach
4 oz fresh arugula
2 oz chopped radicchio
2 hard boiled eggs cut into wedges
1 avocado sliced into wedges
2 oz cojeta (or feta) cheese crumbled
2 oz grilled pork belly cut into small cubes (or bacon)
¼ cup sliced strawberries
2 tbl balsamic
directions
1. Toss the greens and radicchio together and put a good size handful on each plate
2. Top with the egg, avocado, cheese, pork/bacon and strawberries and drizzle the balsamic over the top
