STUFFED VINE LEAVES (DOLMAS)

WOW this is so delicious and versatile!! Easy to make, amazing lemony & Mediterranean flavors and makes a perfect canape, starter or entree. This version is Lean & Green and totally Ketofabulous! Leave out the feta and it is vegan, add ground turkey and its a hearty dish. Enjoy!!!

ingredients
20 Fresh Marinated Grape Leaves*
3 cup Cauliflower Rice drained
1.5 cup pitted Kalamata olives
¾ cup cherry tomatoes
4 oz feta cheese (optional)
2 bunch fresh oregano
1 cup tomato sauce (see recipe)
*Vine/Grape leaves can be found at most grocery stores near the olives.
directions
For the stuffing
1. Using a food processor blend the olives, tomatoes, (fetta) and oregano into a chunky paste
2. In a bowl combine the paste with the cauliflower rice and mix, but don’t overmix
Assembly
1. Place one grape leaf on a clean work surface with the veins up
2. Spoon 1-2 tbl of the mix onto the bottom of the leaf and shape into a horizontal “log” that stretches from side to side of the leaf
3. Roll the leaf upwards and fold the 2 sides in to form a tightly rolled “cigar”
4. Place in a glass baking dish and continue until all of the “cigars” are done
5. Spoon the tomato sauce over the “cigars”, cover and bake for 20 min at 350°
